Embrace the colors and flavors of autumn with Erin's vibrant beetroot salad. This seasonal delight combines the earthy sweetness of roasted beets with crisp, fresh greens and a tangy vinaigrette, offering a refreshing and nutritious dish that celebrates the bounty of the harvest season. 

A combo of 140g roasted beetroot, pickled red onions, 1 orange split into segments and handful roasted hazelnuts on top of rocket. Dress it with a citrus vinaigrette (olive oil, lemon juice, red wine vinegar, sprinkle stevia, sea salt) Optional crumbles of feta or goats cheese on top.

1/4 salad = about 8g carbs
