Banana Pikelets

This pikelets recipe is bananas! It uses only two ingredients; bananas and eggs. It is super easy, delicious and something magical. All you have to do is whisk these two ingredients together and cook in a frying pan. Don’t believe us? Why not try it for yourself? We recommend keeping them fairly small and pikelet sized to make it easier to flip them.

Preparation Time: 10 minutes

Cooking Time: 5 minutes

Difficulty: Easy

Serves: 8 pikelets (1-2 serves)

Ingredients:

  • 1 ripe banana
  • 2 large eggs
  • Butter or oil for cooking (optional)

Method:

  1. Peel the banana and break into chunks. In a medium-sized bowl, mash the banana with a fork until there are no large lumps
  2. Add the eggs into the banana mixture and stir until combined. The batter will be more liquidy than regular pancake batter
  3. Heat a frying pan over a medium heat and heat some oil or butter
  4. Place some batter in the frying pan (pikelet sized amounts) and fry until brown and then turn
