Black Bean Tortillas

This is the perfect recipe for a fuss-free meal and is extremely quick to prepare! Black beans are low on the glycaemic index and can help to manage blood sugar levels. Beans act as a good alternative to meat as they contain more protein.

Preparation Time: 5 minutes

Cooking Time: 10 minutes

Difficulty: Fairly Easy

Serves: 2

Ingredients:

  • 4 white corn tortillas
  • 1 cup canned black beans (rinsed and drained)
  • 4 tablespoons salsa
  • ½ teaspoon ground cumin
  • ½ avocado, mashed
  • 1 teaspoon lime juice
  • Pinch of ground black pepper
  • 1 cup chopped iceberg lettuce
  • 1 tomato chopped
  • 1 green shallot/spring onion

Method:

  1. Preheat oven to 200°C
  2. Line a small tray with baking paper and place tortillas on a baking tray
  3. Spray the tortillas with oil and bake for 8-10 minutes, or until crisp
  4. Mix the black beans, salsa and cumin in a small saucepan over a low heat until warm
  5. Divide the bean mixture evenly between the tortillas
  6. Slice green shallots, iceberg lettuce and tomato thinly
  7. Mix avocado, lime juice and pepper in a small bowl
  8. Spoon avocado mixture over the tortillas and top with lettuce, tomato and green shallot
