Chicken Lettuce Wraps with Homemade Hoisin Sauce

This recipe is great for when you need a quick and easy dinner! Just make the hoisin sauce ahead of time. By using lettuce instead of tortillas or bread you substantially decrease the number of calories there are in the meal. You will also gain a number of beneficial nutrients such as vitamins A and C. Two of these chicken lettuce wraps with a couple of tablespoons of the hoisin sauce has less than 10g of carbs!

When picking lettuce to use as a wrap we recommend using either Bibb Lettuce, Butter Lettuce or Cos Lettuce. This is as they have large and pliable leaves that are perfect for swaddling your ingredients.

Our homemade hoisin sauce is significantly less sweet than store-bought and prepared versions. Most bottled hoisin sauce contains 14g of carbs in 2 tablespoons. Our homemade version has half that amount. Making it perfect for people living with diabetes!

 

Chicken Lettuce Wraps

Time Saving Tip: use a store-bought rotisserie chicken

Preparation Time: 5 minutes

Cooking Time: 5 minutes

Difficulty: Very Easy

Ingredients:

  • 2-3 chicken breasts (cooked and shredded)
  • 1 cup broccoli slaw or shredded cabbage
  • 2 spring onions (thinly sliced)
  • ¼ cup chopped cashews

Method:

  1. Spoon chicken and broccoli slaw into lettuce leaves
  2. Sprinkle with spring onions and cashews
  3. Drizzle with hoisin sauce (recipe below)

 

Homemade Hoisin Sauce

Preparation Time: 5 minutes

Cooking Time: 5 minutes

Difficulty: Easy

Ingredients:

  • 1 tablespoon chopped garlic
  • 2 teaspoons minced ginger
  • 1/3 cup low-sodium tamari or soy sauce
  • 1 tablespoon honey
  • 2 tablespoons rice vinegar
  • 2 teaspoons sriracha sauce
  • 2 tablespoons vegetable oil

Method:

  1. Combine garlic, ginger, tamari/soy sauce, honey, vinegar and sriracha in a small bowl
  2. Heat oil in a small saucepan over a medium heat
  3. Add sauce mixture to the saucepan and whisk until smooth
  4. Cook, whisking often until mixture thickens (about 5 minutes)
  5. Remove from heat and let cool
