Cauliflower is a magnificent and nutritious vegetable; it is a commonly neglected low-carbohydrate vegetable. However, it is full of vitamin C, fibre, potassium and folate. 1 cup of raw white cauliflower contains only 25 calories with 2 grams of dietary fibre and 80% of the recommended daily amount of vitamin C!

The ingredients for the Cauliflower Fried Rice are;

  • 1 small head of cauliflower, cut into florets
  • 3 slices bacon, diced
  • 2 large eggs
  • 2 medium scallions, sliced thin
  • 2 tablespoons sesame oil
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
