Recipe Round-up: light crepes w/ cinnamon-yoghurt and blueberries

Welcome to another IBD Medical blog post- with a tasty twist! A new way to bring real value to readers, this is our first edition of Recipe Roundup- where we will be regularly bringing you delicious and diabetic friendly recipes and meals. Today, the perfect solution for brekkie or brunch at home: crepes!

Whether you're trying to control your blood sugars, lose weight, or just eat healthier, you don't have to give up on the things you love, you just have to tweak them a little. This week we look at one of our favourite healthy recipes: Crepes! Low-carb and delicious, we like covering these crepes with blueberries and vanilla-cinnamon yogurt. 

What you will need:

  • Spatula
  • Non-stick fry pan
  • Canola cooking spray
  • Blender
  • Whisk
  • Medium glass or ladle

Ingredients:

Crepes

    • 1/2 cup low-fat cottage cheese
    • 1/4 cup oats
    • 1/2 cup egg whites
  • Optional:
    • 1tbsp. of stevia (for sweeter crepes!)

Toppings:

    • 1 Cup Greek yoghurt
    • 1 tsp. vanilla extract
    • .5 tsp cinnamon (or more to taste)
    • Blueberries

Method:

Prep:

  1. Whisk yoghurt, vanilla extract and cinnamon together and set aside,
  2. Place cottage cheese and egg whites into the blender, add oats, (and optional stevia) then blend until smooth.

Cook:

  1. Put frypan on medium heat. When hot but NOT smoking, add a small amount of cooking spray to keep crepes from sticking,
  2. Add crepe mixture to pan one ladle/glass at a time, swirling pan to spread mixture,
  3. Cook each crepe until golden brown on both sides.

Assemble:

  1. Put a small stack of crepes on a plate and top with yogurt and loose handful of blueberries 

Variations:

  • Try replacing the cinnamon-yogurt with sugar-free jam, or with peanut butter and the blueberries with banana!

Nutritional information

Each serve of crepes has only 200 calories and 18g of carbs and a massive 27g of protein!
