This Rhubarb Orange Crisp recipe uses less sugar and adds flaked almonds and almond flour for a festive, crunchy topping.'

Here’s the recipe lowdown:

Rhubarb Crumble (Diabetes-Friendly)

  • Servings: 10
  • Carbs: ~25g per serving

Ingredients:

Filling:

  • 500g (4 cups) diced rhubarb
  • 100g (1/2 cup) of sweetener (stevia, xylitol, coconut sugar, or rice syrup)
  • 110ml (1/2 cup) orange juice
  • 110ml (1/2 cup) water
  • 1/4 teaspoon salt
  • 1/2 teaspoon grated orange zest
  • 2 tablespoons cornflour or arrowroot
  • 1 teaspoon vanilla extract

Topping:

  • 80g (1 cup) oats
  • 50g (1/2 cup) sliced almonds
  • 70g (2/3 cup) almond flour
  • 110g (1/2 cup) butter or melted coconut oil
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 100g (1/2 cup) of sweetener (stevia, xylitol, coconut sugar, or rice syrup)

Instructions:

1️⃣ Preheat your oven to 175°C (350°F).

2️⃣ Prepare the crumble: In a large bowl, mix together the melted butter or coconut oil and sweetener. Stir in the oats, almond flour, almonds, cinnamon, and salt until combined.

3️⃣ Base layer: Press half of the crumble mixture into a greased 9-inch baking dish.

4️⃣ Add the rhubarb: Evenly spread the diced rhubarb over the base.

5️⃣ Make the filling: In a saucepan, combine all the filling ingredients and cook until thickened. Pour the mixture over the rhubarb.

6️⃣ Top it off: Sprinkle the remaining crumble mixture evenly over the top.

7️⃣ Bake for 50-60 minutes, or until golden brown and bubbly. If the top browns too quickly, cover lightly with foil.

Serve with fresh whipped cream or coconut cream for an extra touch. Enjoy this diabetes-friendly dessert with all the flavors of the original recipe!
