SALMON PASTA SALAD

Salmon Pasta Salad

 

Try this easy to prep salmon pasta salad, perfect for a quick and light lunch! This delicious pasta dish is filled with protein and Omega-3 fatty acids.

 

Serves: 2

Prep Time: 15 minutes

Difficulty: Easy

 

Ingredients:

  • 150g penne
  • 100g green beans
  • 220g salmon (canned or fresh)
  • 200g chickpeas (drained, rinsed)
  • 125g cherry tomatoes
  • ½ medium red onion
  • 25g rocket
  • 1tbs capers
  • 1 ½ tbs wholegrain mustard
  • 1tbs balsamic vinegar
  • 2 tbs orange juice
  • ½ tbs olive oil

 

Method:

  1. Cook pasta in a large pot of boiling salted water, according to package instructions or until al dente. Drain, and rinse under cold water.
  2. Steam the green beans until tender. 
  3. Cook the salmon on low heat in a lightly oiled pan for 4 mins each side and break into chunks. Or if using canned salmon, break into chunks. 
  4. Gently mix salmon together with the pasta, beans, chickpeas, quartered tomatoes, sliced onion, rocket and capers.
  5. In a small separate bowl, whisk the mustard, vinegar, orange juice and olive oil. To serve, pour the dressing over the salad and mix through. 

 

Cooking tip

  • To reduce calories use whole-grain pasta instead of regular pasta as it has lower calories, higher fiber and other micronutrients.
