Blue energy ball Recipe

Blueberry Energy Balls 
Makes 12 small balls

Carb info: about 12g carbs per ball. Protein comes from the nut butter, chia seeds and almond flour combined with fibrous oats help to prevent any glucose spikes.

Ingredients:
- 2 tablespoons melted coconut oil
- 2 tablespoons creamy nut or seed butter (I used peanut butter)
- 2 tablespoons agave syrup or low GI sweetener
- 1 teaspoon pure vanilla extract
- 1 teaspoon unsweetened almond milk (or any milk of your choice)
- 1 teaspoon of blue dye (spirulina, blueberry powder or food colouring)
- 120 grams (1.5 cup) oat flour
- 50 grams (1/2 cup) almond flour
- 1 tablespoon milled chia seeds
- 2 tablespoons white chocolate chips
- A pinch of salt

Instructions:
1. Blitz your oats into a fine flour.
2. In a large bowl mix together melted coconut oil, sweetener, peanut butter and vanilla. In a small bowl mix together blue colouring with milk to get a bright blue colour. Add colouring to the liquid mixture and beat until a smooth blue paste forms.
2. Add in almond flour, oats, chia seeds and salt and mix until we’ll combined.
3. Fold in white chocolate chips.
4. Roll into 12 small balls and refrigerate for 15 minutes or until firm.
