Ingredients

  • 150 g penne pasta, preferably wholegrain
  • 100 g green beans
  • 220 g salmon, fresh or canned
  • 200 g chickpeas, drained and rinsed
  • 125 g cherry tomatoes, quartered
  • ½ medium red onion, thinly sliced
  • 25 g fresh rocket
  • 1 tablespoon capers

Orange & Mustard Dressing

  • 1½ tablespoons wholegrain mustard
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh orange juice
  • ½ tablespoon extra virgin olive oil


Method

  1. Cook the pasta in a large saucepan of boiling water according to the packet instructions, or until al dente. Drain and rinse under cold water.
  2. Steam the green beans until tender but still slightly crisp. Allow to cool.
  3. If using fresh salmon, cook in a lightly oiled frying pan over medium-low heat for approximately 4 minutes on each side, or until cooked through. Allow to cool slightly and break into chunks. If using canned salmon, drain and break into chunks.
  4. In a large bowl, gently combine the salmon, pasta, green beans, chickpeas, cherry tomatoes, red onion, rocket and capers.
  5. In a separate small bowl, whisk together the wholegrain mustard, balsamic vinegar, orange juice and olive oil.
  6. Pour the dressing over the salad and gently toss until everything is evenly coated.
  7. Serve immediately or refrigerate until ready to eat.
