Low-Carb Zucchini & Mozzarella Frittata

A protein-packed, low-carb frittata that’s perfect for diabetics. Made with fresh zucchini, creamy mozzarella, and sun-dried tomatoes, this easy one-pan meal is great for breakfast, lunch, or dinner.

Ingredients (4 Servings)

  • 2 tbsp extra-virgin olive oil
  • 1 ½ cups thinly sliced red onion
  • 1 ½ cups chopped zucchini
  • 7 large eggs, beaten
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ⅔ cup fresh mozzarella balls (pearl-size or baby)
  • 3 tbsp chopped sun-dried tomatoes (preferably no added sugar)
  • ¼ cup thinly sliced fresh basil

INSTRUCTIONS 

  1. Preheat & Prep

    • Position oven rack in the upper third and preheat the broiler.
  2. Cook the Veggies

    • Heat olive oil in a large, oven-safe skillet over medium-high heat.
    • Add onion and zucchini, stirring frequently, until soft (about 3-5 minutes).
  3. Add the Eggs

    • In a bowl, whisk eggs with salt and pepper.
    • Pour the egg mixture over the veggies.
    • Cook for about 2 minutes, lifting the edges so the uncooked egg can flow underneath.
  4. Broil to Perfection

    • Arrange mozzarella and sun-dried tomatoes on top.
    • Transfer the skillet to the oven and broil until the eggs are slightly browned (about 1 ½ - 2 minutes).
  5. Finish & Serve

    • Let it rest for 3 minutes.
    • Top with fresh basil, then carefully slide or lift the frittata onto a plate.
    • Slice into 4 portions and enjoy!
