Instead of traditional potato salad, enjoy this delicious alternative featuring roasted cauliflower, crispy bacon, protein-rich eggs, and a creamy, tangy dressing. Ingredients (Serves 4)

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 hard-boiled eggs, peeled and chopped
  • 6 slices turkey bacon or regular bacon, cooked and crumbled
  • ¼ cup shredded cheddar cheese (or dairy-free alternative)
  • 2 scallions, thinly sliced, plus more for garnish

Dressing:

  • 1 tablespoon Dijon mustard
  • ⅔ cup Greek yogurt (or mayonnaise for a richer flavor)
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt

 

Instructions
  1. Roast the Cauliflower: Preheat the oven to 400°F (200°C). In a bowl, toss cauliflower florets with olive oil, salt, and pepper. Spread them in an even layer on a parchment-lined baking sheet. Roast for 20–25 minutes, stirring halfway through, until golden brown and tender. Let cool for a few minutes.
  2. Prepare the Mix-Ins: Slice the hard-boiled eggs into bite-sized pieces and chop the cooked bacon. Add them to a large bowl with the roasted cauliflower, shredded cheese, and sliced scallions.
  3. Make the Dressing: In a separate bowl, whisk together the dressing ingredients until smooth.
  4. Combine & Serve: Pour the dressing over the cauliflower mixture and toss until well coated. Garnish with extra scallions before serving.
