Instructions
  1. Prep: Preheat oven to 350°F (180°C). Spray a mini-muffin tin with nonstick cooking spray.
  2. Make Avocado Puree: In a food processor, blend the avocado until completely smooth. Scrape down the sides as needed.
  3. Mix Wet Ingredients: In a large bowl, combine avocado puree, eggs, canola oil, and vanilla.
  4. Mix Dry Ingredients: In a separate bowl, mix Stevia sweetener, cocoa powder, almond flour, espresso powder, baking soda, and salt. Add the dry mixture to the wet and stir to combine.
  5. Make Chocolate Sauce: In another bowl, whisk together all chocolate sauce ingredients.
  6. Combine: Gently fold walnuts and the chocolate sauce into the brownie batter.
  7. Bake: Scoop about 1 tablespoon of batter into each section of the mini-muffin tin. Smooth the tops. Bake for 10–15 minutes, until set and a toothpick comes out mostly clean.
  8. Cool: Let cool in the pan, then transfer to a wire rack to cool completely.
