Low-Carb Garlic Butter Chicken Meatballs with Cauliflower Rice

Ingredients (4 Servings)

For the Meatballs:

  • 1 lb (450g) ground chicken or turkey
  • ½ cup shredded cheese (mozzarella, cheddar, or provolone)
  • 4 cloves garlic, grated
  • 1 tsp Italian seasoning
  • ½ tsp crushed red chili flakes (optional)
  • 1 crumbled bouillon cube (optional)
  • Salt and freshly ground black pepper, to taste
  • ½ cup fresh chopped parsley or cilantro

For the Sauce:

  • 3 tbsp butter, divided
  • ½ cup chicken stock
  • Juice of ½ lemon
  • 1 tbsp hot sauce (e.g., Sriracha)
  • 2 cloves garlic, minced

For the Cauliflower Rice:

  • 1 medium cauliflower head, grated (or 1 packet of riced cauliflower)
  • ½ cup water

Instructions

  1. Prepare the Cauliflower Rice

    • Grate the cauliflower using a large grater or food processor.
    • Transfer to a microwave-safe dish, add ½ cup water, and cover.
    • Microwave for 4 minutes, then fluff with a fork.
  2. Make the Chicken Meatballs

    • In a large bowl, combine ground chicken, shredded cheese, grated garlic, Italian seasoning, bouillon cube, red chili flakes (if using), parsley, and black pepper.
    • Mix well and form into medium-sized meatballs.
  3. Cook the Meatballs

    • Heat 2 tbsp butter in a large skillet over medium-low heat.
    • Add meatballs and cook for 8–10 minutes, turning occasionally, until browned and cooked through.
    • Baste with melted butter while cooking for extra juiciness.
    • Remove from skillet and set aside.
  4. Prepare the Sauce

    • In the same skillet, melt the remaining 1 tbsp butter.
    • Add lemon juice, chicken stock, hot sauce, minced garlic, and parsley.
    • Cook for 3–4 minutes, stirring regularly, until slightly reduced.
    • Adjust seasoning with salt and pepper.
  5. Assemble & Store

    • Divide cauliflower rice into meal prep containers.
    • Top with meatballs and drizzle with sauce.
    • Store in airtight containers and refrigerate for up to 4 days.

💡 Freezing Tip:

  • Uncooked Meatballs: Freeze on a tray for 1 hour, then transfer to a sealed bag for up to 4 months.
  • Cooked Meatballs: Cool completely, then freeze in an airtight container for up to 3 months. Thaw overnight in the fridge before reheating.
