INGREDIENTS

  • 700g Italian sausage  – or other sausage like pork, chicken, or turkey
  • 1 tbsp olive oil
  • 3 capsicums, sliced into strips – Use a mix of red, yellow, and green for colour
  • 1 small brown onion, sliced into half-moons
  • 3 cloves garlic, minced
  • 1½ tsp Italian seasoning – A blend of basil, oregano, thyme, and rosemary
  • ½ tsp chilli flakes (optional) – Adds a little heat if you like spice
  • 400 ml passata
  • Salt & black pepper to taste

INSTRUCTIONS

  1. Brown the Sausages - Heat olive oil in a large frying pan over medium heat.
    Sear sausages on both sides for 3-4 minutes per side, until browned. This step locks in flavour and keeps the sausages juicy!
    Alternative: You can also air fry the sausages at 190°C for 5-7 minutes instead of pan-searing.
  2. Prepare the Vegetables- Slice capsicums into thin strips and onion into half-moons. Mince garlic and mix with Italian seasoning and chilli flakes (if using).
  3. Assemble the Slow Cooker - Place the capsicum, onion, and garlic in the slow cooker. Toss together to mix. Pour passata over the veggies. Nestle the browned sausages on top.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the sausages are fully cooked and the capsicum and onions are soft.
